I have a solution for your paper towel usage! First of all, do you know that if each American family used one roll of virgin fibre paper towels with 100% recycled one, we could save 544,000 trees!
Now, do you know that if you used a "t-wow-el", a reusable cloth-like towel that looks like a paper towel but has much better benefits, you could save thousands of more trees. And, by the way, "t-wow-el" is recyclable and compostable. You should check out the product details at http://www.natureswizard.com/index.php?cat=10
Thanx and good luck on your venture!
